What is Shrimp Senbei (Rice Crackers)?

Shrimp Senbei (Rice Crackers) are traditional Japanese snacks made by either using small shrimps as they are, or by mixing shrimp powder into the dough.
While rice crackers are generally made from rice, Shrimp Senbei are made using starch derived from potatoes, etc., and shrimps as ingredients.
Sometimes the whole shrimp is used (in which case, small-sized shrimps are used), or the flesh is crushed and ground into a powder, mixed with starch, and either baked or fried to produce it.
Shrimp Senbei made with shrimp and rice are also known by other names such as “Ebi Okaki” and “Ebi Kaki Mochi”.
They are generally made in regions where shrimps are caught, but particularly famous are Shrimp Senbei made with shrimps caught in the warm seas of western Japan.
